On this episode of U Look Hungry, Helen Holly is talking with chef Alex Raij of Txikito, El Quinto Pino, and La Vara- three Spanish Restaurants in New York City. Alex talks about growing up in a Argentinian and Jewish household in Minneapolis, and how that developed her food tastes. Tune in to find out why Alex decided to focus on Spanish cuisine in her restaurants. Helen and Alex also discuss tapas, and why they have been so popular in the United States, yet so misunderstood. Alex's most recent restaurant is La Vara in Cobble Hill, and Helen and Alex talk about the Moorish and Jewish influences incorporated into La Vara's menu. Tune in and learn more about Alex's restaurants and Spanish cooking! This program has been sponsored by White Oak Pastures.

"I have an affinity for [Spanish food]...I just understand it intuitively. I think that makes it easy to fall in love with something when you find you have a real connection to it that flows easily."

"Txikito is a Basque restaurant, and it's really a love letter to my husband and what he left behind."

On today's episode of The Farm Report, Erin Fairbanks is chatting with Atina Diffley, farmer at Gardens of Eagan outside of Minneapolis/St. Paul, and author of the new book Turn Here Sweet Corn: Organic Farming Works. Tune in to hear Atina recount the experiences of being an organic farmer during a boom of big agriculture, the importance of organic certification, and trying to run and salvage a farm during suburban construction in Minnesota. Atina also explains what is the process of "soil building" entails, and how you can convert a chemically farmed plot into a true organic farm in 36 months. Now, Atina has given up farming to focus on writing, speaking, and telling her and her husband's stories. Tune in to learn more! This episode has been brought to you by Hearst Ranch.

"The Monsantos and these organizations that a lot of people complain about are not just going to change because it's the right thing to do. We as farmers and consumers have to create the lives and world that we want, and we have the power to do that." -- Atina Diffley on The Farm Report

On this week's episode of Straight, No Chaser, Katy Keiffer is talking with Dr. James Johnson. James R. Johnson, M.D. is Professor of Medicine at the University of Minnesota, Director of the Infectious Diseases T32 Training Program and Senior Associate Director of the Infectious Diseases Fellowship Program (both, University of Minnesota), and Director of the Minneapolis VA Molecular Epidemiology Unit. Dr. Johnson is a frequently invited speaker at national and international scientific meetings, has presented at Capitol Hill briefings and hearings, and has served on multiple national task forces, committees, and grant review panels. He serves as an Attending Physician for the VA Infectious Diseases Consult Service and Infectious Diseases Clinic, and sits on multiple hospital committees, including (currently) the Antimicrobial Subcommittee, Space Committee, and Institutional Biosafety Committee. Tune into this episode to learn about the spread of resistant strains of bacteria, and how mere contact can cause extreme contamination. Hear how nations abroad have curbed antibiotic use food animals, and how it has affected food safety. Listen in to hear Dr. Johnson and Katy discuss the measures that consumers can take to protect and educate themselves from the ever-prevalent problem of food contamination. This episode has been brought to you by White Oak Pastures.

"The U.S. uses more antibiotics per animal per pound of meat that comes to market than any other industrialized country for which we have data." [10:00]

"To suggest that one needs growth promoter to have a healthy agriculture industry is patently false as demonstrated by the totality of Europe." [23:50]
